Tsuyakatsu.

A note from our owner-chef

Hello. I am the owner-chef of Tsuyakatsu.

The tonkatsu I want to make is light on the palate and enjoyable throughout the meal. I hope you can savor the flavor of good pork and enjoy every piece, right to the last.

That is why I set a standard for every detail: trimming the pork, the thickness of the coating, the flavor of the sauce, and each accompaniment. Tonkatsu, rice, cabbage, kkakdugi and soup should come together as one satisfying meal.

What we want to preserve at Tsuyakatsu is simple: delicious, satisfying food and a comfortable, enjoyable time at the table. I want this to be a place where everyone feels welcome.

Preparing pork to bring out its flavor

We use Boseong Nokdon pork, prepared with salt-koji curing and 100 hours of aging. Every morning, we trim the connective tissue, sinew and fat ourselves.

Cooking begins after you order. Frying temperature, cooking time and resting time are adjusted to each cut, including loin and tenderloin. From preparation to cooking, I personally maintain these standards.

A thin coating, a crisp bite

I believe the coating should be crisp and as thin as possible, so the quality of the pork can shine through.

To find the texture I wanted, I compared many kinds of breadcrumbs and repeatedly tested different batter ingredients and proportions. The breadcrumbs and batter we chose bring the pork and its coating into balance.

Care in every spoonful of rice

Our rice is newly harvested Shindongjin, known for its large grains and pleasing bite. We use it within one week of milling and cook small batches of just 10 servings at a time.

We select cabbage from Jeju or the Gangwon highlands according to the season. Each morning, we slice it as finely as possible with a dedicated slicer to bring out its natural sweetness and texture, and use it all that day.

Sauce and sides that complete the meal

We serve tonkatsu with Himalayan pink salt and our house sauce. Demi-glace softens the sharper acidity of Worcestershire sauce, creating a rich flavor that lingers.

We pay attention to the ripeness of our kkakdugi, made with Jeju radish. Its tangy, gently spicy flavor is meant to refresh your appetite between bites of tonkatsu.

The cabbage is served with an oriental-style dressing, while the miso soup has a subtly spicy finish. Every accompaniment is prepared with the whole meal in mind.

Menu ideas that began with our guests

When Tsuyakatsu first opened, cheese tonkatsu was not on the menu.

After guests asked for cheese tonkatsu, we created our Tenderloin & Cheese Tonkatsu Set. Later, requests for a loin option led us to add the Loin & Cheese Tonkatsu Set.

We keep shaping our menu by listening to what guests enjoy and what they hope to try next.

Good food, a full meal, a comfortable welcome

For dine-in sets, all accompaniments can be refilled, except for the tonkatsu itself. We want you to enjoy your meal and leave feeling satisfied.

Please feel comfortable sharing dishes. When families visit with children, we try to bring small plates and food scissors before they need to ask.

A restaurant built around food I love

I originally trained in Western cuisine. When preparing to open a restaurant, I wanted to cook something people could keep coming back to as part of everyday life.

The biggest reason I chose tonkatsu is that I love it myself.

Because I love this food, I keep thinking about the flavor I want to create, preparing and cooking it myself as I refine my standards. I hope the tonkatsu I enjoy becomes a meal you enjoy, too.

Before you visit

Are you open on Sundays?

Yes. Our regular hours are 11:00–21:00 every day, including Sundays, with a break from 15:00–17:00. Before visiting, please check Naver Maps for holiday hours or temporary closures.

Do you have tonkatsu sets for KRW 15,000 or less?

The Pork Loin Set is KRW 12,900 and the Pork Tenderloin Set is KRW 13,900. The Loin & Tenderloin Set and Cheese Set are KRW 14,900 each, based on our September 2026 menu.

How do I reserve or join the waiting list?

Reserve through Naver Booking opens in a new tab. Some Naver offers provide a benefit without reserving a table, so check the conditions of each option. To join the waiting list at the restaurant, use the Catchtable tablet at the entrance. To join remotely, use the Catchtable app.

What comes with a set, and what can I refill?

Each set includes tonkatsu, cabbage salad, newly harvested Shindongjin rice, miso soup, house-made tonkatsu sauce, Himalayan pink salt, pickled chili strips, and kkakdugi made with Jeju radish. For dine-in sets, all accompaniments are refillable; tonkatsu is excluded.

Can I eat alone or bring children?

Solo diners are welcome. We have three tables for four and five tables for two. There is no one-dish-per-person requirement. For families with children, we try to provide small plates and food scissors.

Where can I park?
